The stones that were moved in the Tertiary Age by an old dried glacier conform the land where the vines are growing, giving them an special character and minerality. Those traces of the dried glacier can still be seen from the cellar. There are three different lines of product. Reserva and Gran Reserva are produced following the traditional methods of production in La Rioja; the Fincas are modern style wines, which are produced with extremely low sulphites, following a process patented by the oenologue which consists in extracting and re-pumping the carbonic gases produced on the fermentation to the wine on the bottom of the tank; this turns over the wine avoiding pumping and kills the bad bacteria making the wines more aromatic and alive with extremely low sulphites; and finally the Monica Selección, which is a combination of the traditional Rioja style with our modern patented method.
