Our philosophy is based on sustainable work and the non-use of chemical products. The vineyards are cultivated under ecological and biodynamic guidelines, producing unique wines with ridiculously low productions (one kilo of grapes per vine). The vineyards are the oldest in this area, between 70 and 100 years old. All the work is done manually, no machines are used in the ploughing process, the organic matter obtained from the winery's own plant residues is used as fertilizer, this way we are recovering the soils. In organic vineyards like ours, it is usual to leave a vegetal cover between strains, this allows us to control the strength of the vines, protect the soil from erosion and bring balance to the ground.
